Leny's craft chocolate
In Jamaica, cocoa beans are mainly grown in four parishes.
There are four parishes: Clarendon, St. Mary, St. Elizabeth, and St. Thomas.
Even though they are all Trinitario varieties, the taste of the cacao beans differs from parish to parish, probably because of the difference in soil.
Jamaican Trinitario is certified as Fine or Flavor by The International Cocoa Organization (ICCO). Generally, fine cocoa beans are produced from Criollo or Trinitario varieties, and bulk (or regular) cocoa beans are produced from Forastero varieties. Fine flavors include fruit (fresh and ripe brown), floral, herbal, woody, nutty, caramel notes and a rich, balanced chocolate base.
Lenny does not use cocoa butter. Cocoa butter is naturally contained in cacao beans, and if you use cacao butter from other countries, it will no longer be 100% Jamaican Trinitario. Chocolate made only from cacao beans and sugar.
Lenny's cacao beans have a natural sweetness, so they are delicious even at 95%. The main product is dark chocolate with 75% cacao and 95% cacao. There are also small gift sets available as gifts.
